Today I decided to make one last summer salad before the temperature drops and watermelon goes out of season. This salad is extremely simple: cut up some watermelon, chop a few leaves of fresh mint, mix together in a big bowl, and add bite-sized pieces of mozzerella. For the dressing, I mix up a little lemon juice, a teaspoon or so of honey and some of the juice from the watermelon. Pour over your salad and add coarse salt to taste. Garnish with a sprig of mint. Delicious and refreshing!
