I created this sandwich completely on a whim. I was at the store tonight, and I decided to buy a small round of smoked Gouda cheese. I don’t think I’ve ever tried Gouda before, so I decided to use it in a grilled cheese sandwich (because the only thing tastier than cheese is melty cheese). While I was cooking the sandwich, I ransacked my fridge in search of some creative additions to the sandwich. I settled on a apple and some turkey bacon. I thinly sliced the apple, cooked the turkey bacon, and added a little bit of each to the sandwich and continued cooking until the cheese was melted and gooey. The saltiness of the bacon and the sweetness of the apple mixed really nicely with the smokiness of the gouda. Best cooking experiment ever.
*If you don’t eat meat, or simply don’t like bacon, you can omit it and add just a pinch of truffle salt- it’s a bit pricey, but totally worth it. Find it online or at specialty food stores like Williams-Sonoma.
