Apple Cinnamon Muffins

In an attempt to become a better breakfast-eater, I decided to make a big batch of healthy apple cinnamon muffins this weekend. I was pleasantly surprised when I found this recipe, which is only 1 Weight Watchers point per muffin. That sounds significantly healthier than eating leftover Halloween candy for breakfast… (My 6 year old self would be so jealous right now!)
I did change the recipe slightly, in part on purpose and in part on accident. First, I used fat-free milk instead of the 2% the recipe calls for. I just really can’t stand fatty-tasting milk. Next, I only used about a quarter cup of applesauce because that was all that was left in the jar. I was afraid that might affect the texture of the muffins, but it didn’t seem to make a big difference. However, the muffins were a little bland, so next time I’ll make sure to add the full amount of applesauce, a little more cinnamon, and a little more of the diced apple.
Overall, not bad for only 1 WW Point! And they made the whole house smell apple-cinnamony while they were baking, which was an added bonus.
