Ham, Egg, and Cheese Cups

Lately, I’ve been trying to make heartier breakfasts on the weekends. My husband and I rarely get to enjoy breakfast together during the week, and, even if we do, it’s usually standing at the counter or eating as we walk out the door. On the weekends, there is something so nice and relaxing about sitting down together to enjoy a sit-down breakfast. These ham, egg, and cheese cups are quick and easy to make, so they are the perfect way to start your day off right. 
Place slices of ham in muffin tin. Patch holes with additional bite-sized pieces of ham.


Sprinkle a pinch of cheese in the ham cup. Crack an egg in each cup.


Sprinkle another pinch of cheese on top of the raw egg. Here, I used mozzarella and cheddar. You could also add some diced vegetables, like bell peppers or onions. Sprinkle with salt and pepper.


Bake at 375 for 15-18 minutes, depending on whether you like the yolks to be runny or firm. Remove from the oven and let cool for a couple minutes. Wiggle out of the muffin tin, and enjoy!
