This is the perfect dessert to make when you are short on time. You can make the dough from scratch, but I used Pillsbury Crescent Rolls to speed things along. One can of the dough and about half of a large apple will make 8 mini apple pies.
Preheat oven according to dough instructions. Dice the apple into very small pieces. Mix with 2 parts brown sugar, 1 part cinnamon, and 1 part ground nutmeg. Let the apple mixture sit for a few minutes so the flavors can blend and the mixture starts to get syrupy.
Unroll the crescent triangles and place a small amount of the apple mixture on each.
Roll up the triangles, pressing the edges together to seal the apple mixture inside. Bake according to dough instructions.
That’s it. It’s easy as….well, pie!
